- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (1 stick) unsalted butter for frosting
- 1/4 cup unsweetened cocoa powder for frosting
- 6 tablespoons Coca Cola for frosting
- 3 cups powdered sugar, sifted
- 1 1/2 cups chopped pecans
How to Make this
1. Preheat oven to 350°F and grease a 9×13 inch pan well, or line it with parchment paper, set aside.
2. In a large bowl whisk together 2 cups all-purpose flour, 2 cups granulated sugar, 1/2 cup unsweetened cocoa powder, 2 teaspoons baking soda and 1/2 teaspoon salt until evenly mixed.
3. In a small saucepan combine 1 cup Coca Cola and 1/2 cup (1 stick) unsalted butter, melt together over medium heat until the butter is melted and the mixture just starts to simmer, then take off the heat.
4. Pour the hot Coke and butter mixture into the dry ingredients and stir to combine, then add 1 cup buttermilk, 2 large eggs and 1 teaspoon vanilla extract and beat until smooth and lump free.
5. Pour batter into the prepared pan and bake 30 to 35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the cake cool in the pan about 10 minutes while you make the frosting.
6. For the frosting, in a saucepan melt 1/2 cup (1 stick) unsalted butter with 1/4 cup unsweetened cocoa powder and 6 tablespoons Coca Cola, bring to a gentle boil and let it bubble for about 30 to 60 seconds, stirring so it stays smooth.
7. Remove frosting pan from heat and whisk in 3 cups sifted powdered sugar little by little until you get a thick, glossy frosting, then stir in 1 1/2 cups chopped pecans (reserve a few tablespoons if you want extra on top).
8. Pour the warm frosting over the warm cake so it soaks in a bit, spread evenly, sprinkle the reserved pecans if using, let the cake cool and the frosting set for at least 20 to 30 minutes, then slice and serve.
