How to Make this

2. In a big ovenproof pan, warm the olive oil over medium heat.

3. Add the onion, which has been chopped, and sauté for about 5 minutes until it is softened.

4. In the minced garlic, red bell pepper, and green bell pepper, stir and cook for another 5 minutes until the peppers are tender.

5. Include the tomatoes that have been diced, and bring to a gentle simmer.

6. Add the sliced chorizo, diced jamón serrano, frozen peas, and smoked paprika. Cook for 3-4 minutes, letting the flavors come together.

7. Add salt and pepper to the mixture so that it tastes just how you want it to.

8. Take a spoon and create four wells in the mixture. Crack an egg into each well.

9. Put the skillet in the oven and bake for 10-12 minutes, or until the egg whites are set but the yolks remain runny.

10. Take it out of the oven; decorate it with fresh parsley; and serve it up in a jiffy. That’s right. You got it right. No green stuff hanging on the edge of the plate. That’s how I was taught to garnish by a very picky former sous-chef.
