The Best EVER Risotto Recipe

I’ve made countless risottos, but this is the one my family and friends request again and again. Creamy, silky, and rich in that unmistakably Italian way, it never lasts long at the table.

This is the risotto I never shut up about. I crave that glossy, creamy bite from Arborio rice, the kind that tastes rich without being heavy or fussy.

My family asks for it constantly, and honestly, I get it. It reminds me of the bowls I demolished in Italy, where every spoonful had that slow, savory pull that makes silence happen at the table.

And the Parmigiano-Reggiano? Big reason I’m obsessed.

Salty, nutty, completely addictive. But what I love most is how simple it feels and how ridiculously special it tastes.

No drama. Just my favorite risotto ever.

For real.

Ingredients

  • Arborio rice gets creamy and cozy without turning into mush.
  • Warm broth slowly builds that rich, spoonable risotto texture everyone loves.
  • White wine adds a little tang so it doesn’t taste flat.
  • Shallot brings gentle sweetness, not that sharp onion punch.
  • Garlic makes it savory and way more craveable.
  • Butter gives it that glossy, restaurant-style finish.
  • Olive oil helps everything start soft, golden, and fragrant.
  • Parmigiano-Reggiano is salty, nutty, and basically the whole reason we’re here.
  • Salt wakes everything up, because bland risotto is just sad.
  • Black pepper adds a tiny kick without stealing the show.
  • Parsley keeps it fresh, so the bowl doesn’t feel too heavy.
  • Plus, lemon zest adds brightness if you want a cleaner finish.
  • Mushrooms bring earthy depth and make it feel extra hearty.

Ingredient Quantities

  • 1 1/2 cups Arborio rice
  • 5 to 6 cups low sodium chicken or vegetable broth, kept warm
  • 1/2 cup dry white wine (Pinot Grigio or Sauvignon Blanc)
  • 1 small shallot, finely chopped (or 1/2 small yellow onion)
  • 2 garlic cloves, minced
  • 3 tablespoons unsalted butter, divided
  • 2 tablespoons extra virgin olive oil
  • 1 cup freshly grated Parmigiano-Reggiano (plus extra for serving)
  • Salt, about 1 teaspoon or to taste
  • Freshly ground black pepper, about 1/2 teaspoon or to taste
  • 2 tablespoons chopped fresh flat leaf parsley
  • 1 teaspoon lemon zest, optional for brightness
  • Optional: 1/2 to 1 cup sliced cremini or porcini mushrooms, sautéed

How to Make this

1. Warm the broth in a saucepan over low heat and keep it at a gentle simmer.

2. In a large heavy skillet or wide saucepan, heat 1 tablespoon butter and the olive oil over medium heat until shimmering.

3. Add the chopped shallot and cook until translucent, about 2 to 3 minutes, then add the minced garlic and cook 30 seconds more.

4. Add the Arborio rice and stir to coat the grains, toasting gently for 1 to 2 minutes until edges look translucent.

5. Pour in the white wine and stir until mostly absorbed.

6. Add warm broth one ladleful at a time, stirring frequently and allowing the liquid to be mostly absorbed before adding the next ladle. Continue for about 18 to 20 minutes until the rice is creamy and al dente.

7. Meanwhile, if using mushrooms, sauté them in the remaining 2 tablespoons butter over medium heat until golden and any liquid has evaporated, then season lightly with salt and pepper.

8. When the risotto is just tender with a creamy sauce, remove from heat and stir in the grated Parmigiano-Reggiano, the remaining tablespoon of butter, chopped parsley, lemon zest if using, and the sautéed mushrooms if desired.

9. Season to taste with salt and freshly ground black pepper, serve immediately with extra grated cheese on the side.

Equipment Needed

1. Medium saucepan for warming broth
2. Large heavy skillet or wide saucepan for cooking the risotto
3. Wooden spoon or silicone spatula for stirring
4. Ladle for adding broth incrementally
5. Chef knife for chopping shallot, garlic and parsley
6. Cutting board
7. Microplane or fine grater for lemon zest and Parmigiano-Reggiano
8. Box grater or cheese grater for larger amounts of cheese
9. Measuring cups and spoons

FAQ

The Best EVER Risotto Recipe Substitutions and Variations

  • Arborio rice: Substitute with Carnaroli or Vialone Nano rice (both hold shape and yield similar creamy texture; Carnaroli is closest).
  • Dry white wine: Replace with 1/2 cup dry vermouth or 1/2 cup warm broth plus 1 tablespoon lemon juice or 1 tablespoon white wine vinegar for acidity.
  • Parmigiano-Reggiano: Use Grana Padano or Pecorino Romano (Grana Padano is milder; Pecorino is saltier and sharper, so reduce added salt).
  • Unsalted butter: Swap with an equal amount of cultured butter for extra tang or use olive oil plus 1 tablespoon mascarpone for creaminess and sheen.

Pro Tips

1. Keep the broth barely simmering in a separate pot so each ladle you add does not cool the rice and slow cooking. Warm liquid gives a silkier texture and steadier cooking time.

2. Stir frequently but don’t obsessively stir. Gentle, regular stirring releases the rice starches for creaminess; constant, furious stirring is unnecessary and tiring.

3. Taste for doneness rather than following the clock. Arborio should be tender with a slight bite in the center. If it needs more time, add a splash or two of broth and cook a minute or two longer.

4. Finish off heat with the cheese and last tablespoon of butter so they melt into a glossy, velvety sauce. If using mushrooms, make sure they are well browned and most moisture evaporated before folding them in so they do not water down the risotto.

5. Use a simple, crisp white wine you would drink. A glug of decent wine brightens the dish; a poor one will not. Adjust salt at the end since the cheese can add more than you expect.
